::: Ingredients

2 cod fillets (or other mild white fish such as haddock or sole)

⅓ cup full-fat coconut milk (well stirred)

½ teaspoon fresh ginger, very finely grated

1 tablespoon extra-virgin olive oil

½ teaspoon sea salt

Optional: very small pinch turmeric (for warmth, not spice)

Optional garnish: finely chopped chives or cilantro (light amount)

::: Instructions

  • Preheat oven to 375°F (190°C).

  • Lightly oil a small baking dish. Place fish in a single layer.

  • In a small bowl, whisk coconut milk, grated ginger, olive oil, sea salt, and turmeric if using.

  • Spoon the mixture evenly over the fish.

  • Cover loosely with foil to keep the fish moist.

  • Bake 14–16 minutes, until the fish flakes easily with a fork.

  • Remove foil for the final 2 minutes if you want slight surface warmth, not browning.

  • Rest 2 minutes before serving. Garnish lightly if desired.
