Coconut-Ginger Cod

::: Ingredients
2 cod fillets (or other mild white fish such as haddock or sole)
⅓ cup full-fat coconut milk (well stirred)
½ teaspoon fresh ginger, very finely grated
1 tablespoon extra-virgin olive oil
½ teaspoon sea salt
Optional: very small pinch turmeric (for warmth, not spice)
Optional garnish: finely chopped chives or cilantro (light amount)
::: Instructions
Preheat oven to 375°F (190°C).
Lightly oil a small baking dish. Place fish in a single layer.
In a small bowl, whisk coconut milk, grated ginger, olive oil, sea salt, and turmeric if using.
Spoon the mixture evenly over the fish.
Cover loosely with foil to keep the fish moist.
Bake 14–16 minutes, until the fish flakes easily with a fork.
Remove foil for the final 2 minutes if you want slight surface warmth, not browning.
Rest 2 minutes before serving. Garnish lightly if desired.
