Maple-Cinnamon Shortbread

2 cups blanched almond flour
3 tablespoons pure maple syrup
¼ cup extra-virgin olive oil or avocado oil
½ teaspoon cinnamon
¼ teaspoon sea salt
½ teaspoon vanilla extract
::: Instructions
Preheat oven to 325°F (165°C). Line a baking sheet with parchment.
In a bowl, whisk almond flour, cinnamon, and sea salt.
Add maple syrup, oil, and vanilla. Mix until a soft dough forms.
Scoop tablespoons of dough, roll gently, and flatten slightly on the sheet.
Bake 12–15 minutes until edges are just set. Do not brown.
Cool completely on the pan to firm up.
