Maple-Cinnamon Shortbread

::: Ingredients

2 cups blanched almond flour

3 tablespoons pure maple syrup

¼ cup extra-virgin olive oil or avocado oil

½ teaspoon cinnamon

¼ teaspoon sea salt

½ teaspoon vanilla extract

::: Instructions

  • Preheat oven to 325°F (165°C). Line a baking sheet with parchment.

  • In a bowl, whisk almond flour, cinnamon, and sea salt.

  • Add maple syrup, oil, and vanilla. Mix until a soft dough forms.

  • Scoop tablespoons of dough, roll gently, and flatten slightly on the sheet.

  • Bake 12–15 minutes until edges are just set. Do not brown.

  • Cool completely on the pan to firm up.
