::: Ingredients

2 ripe bananas, mashed

2 cups certified gluten-free rolled oats

2 eggs (or flax eggs if preferred)

¼ cup extra-virgin olive oil or avocado oil

1 teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon sea salt

1 teaspoon vanilla extract

::: Instructions

  • Preheat oven to 350°F (175°C).

  • Blend oats into a flour using a blender or food processor.

  • In a bowl, mix bananas, eggs, oil, and vanilla.

  • Stir in oat flour, baking soda, cinnamon, and salt.

  • Pour into a lined loaf pan.

  • Bake 35–40 minutes, until just set and lightly golden.

  • Cool completely before slicing for best digestion.
